  • Pan Seared Tuna over Cajun Cheese Grits with Shrimp Locksley Sauce

      Step 1 - Make Cajun Cheese Grits

      Cook desired amount of Grits according to directions
      Add salt, hot sauce, cayenne pepper to taste
      Add paprika for color
      Add Butter
      Stir in shredded white cheddar cheese and parmesan cheese
      Amount of cheese varies according to taste
      Set grits aside while keeping them hot

      Step 2 - Make Shrimp Locksley Sauce

      Using a large sauté pan or small stock pot heat about ˝ cup of olive oil
      Add 2 cups chopped celery, 2 cups diced onions, and 2 cups diced bell peppers
      Add 1 cup melted butter and cook veggies about 3 minutes
      Add 2 cups sliced mushrooms and 2 or 3 lbs. of peeled shrimp
      Add garlic, season salt, pepper, hot sauce, Worcestershire sauce and Cajun seasoning to taste
      Cook until shrimp are done
      Add 2 cups heavy cream and stir often
      Bring to a boil and add a mixture of cornstarch and water to achieve desired thickness
      Set sauce aside while keeping warm

      Step 3 - Cook Tuna (Grouper or any other fish may be used)

      Use 4 to 6 - 4oz. Tuna steaks
      In a sauté pan heat about 3 table spoons of olive oil
      Add tuna steaks then add melted butter, Cajun seasoning, garlic and hot sauce
      Cook tuna about 3 or 4 minutes on each side to desired doneness

      Step 4 - Place tuna on top of cheese grits then top with shrimp sauce

      Step 5 - Eat
